Grimaldi was drafted by the Florida Panthers in the second round (33rd overall) of the 2011 National Hockey League Entry Draft.

On March 25, 2021, in a home game against the Detroit Red Wings, Grimaldi scored 3 goals in the 1st period. This was his first career hat trick, and he set a franchise record for the fastest hat trick by a Predators player (2 minutes and 34 seconds). He would add a 4th goal in the third period, making him only the 2nd player in Predators history to score 4 goals in 1 game along with Eric Nystrom.
